Veg Masterclass: Mushroom Crispy Bread Amuse

Recipe by Jeff Bland

1 firm button mushroom
1 ½ grams of fine dried wild mushroom powder
1 sheet of filo pastry
15 grams of melted butter / rape seed oil
Salt & pepper

Slice mushrooms into 12 thin pieces (do not season)
Cook gently in a frying pan
Place on kitchen paper and cool
Butter 1 sheet of filo pastry
Arrange mushrooms in one half in lines
Season and sprinkle mushrooms with mushroom powder
Fold over the filo and cut into 2 squares
Brush outside with butter and place on mat
Cook in the oven for 6 mins on 200 degrees C
Remove from oven and serve warm or cold

 

Serving suggestions

Garlic lime and cucumber yoghurt
Avocado and coriander
Tomato chilli and orange
Sieved egg, gurkins and red onion
